BHU researchers develop antioxidant-rich beverage from Palash flowers

Varanasi, May 8 (UNI) Achieving a major breakthrough in the field of Indian botany and food processing, a research team at Banaras Hindu University (BHU), led by senior professor and current Vice Chancellor of BRA Bihar University, Prof. Dinesh Chandra Rai, has developed a powerful antioxidant-rich kombucha beverage from the traditional medicinal flower 'Palash'.
This research has been published in the 2026 issue of the world-renowned Elsevier Group's international journal Food and Humanity. This research is considered extremely important given the growing demand for natural health beverages in the global market.
This research is the result of a high-level international collaboration involving Suman Bharti and Arvind Kumar from the Department of Dairy Science and Food Technology at Banaras Hindu University, along with Akansha Gupta from the CASS Food Research Centre at Deakin University, Australia.
